109年童遊客家-客語推廣計畫-好食料理廚房 客家人的飲食以油、鹹、香為基調去發展,因山居食材取得不易,為了保存食物與多元利用,研發出各種醃漬品及調料,像鹹菜、蘿蔔乾、紅糟醬與金桔醬等,客家人也喜好盡情利用山林間易於取得的野菜生蔬,例如:紫蘇、艾草、龍鬚菜與過貓,這些塑造了客家「吃野、吃粗、吃雜」的飲食特性,客家人的飲食文化處處反映了客家族群勤奮耐勞,愛物惜福的生活哲學。好食料理...
